Preparation of Spinach Gravy

Blanch Spinach
Boil a pot of water and add the fresh spinach leaves. Blanch for about 2-3 minutes until wilted. Drain and immediately transfer to ice-cold water to retain the green color. Once cooled, drain again and blend into a smooth paste.

Add Tomato and Spices
Add chopped tomato, ginger-garlic paste, and green chili. Cook until the tomato is soft. Then add turmeric powder, red chili powder, and salt. Stir well and cook for another 2-3 minutes.

Finish with Garam Masala
Add garam masala and kasuri methi. Stir well and cook for another 2 minutes. Adjust salt to taste.
Preparing Paneer

Prepare Paneer
Cut the paneer into cubes. If using fresh cream, keep it aside.

Combine Paneer with Gravy
Add the paneer cubes to the prepared spinach gravy. Stir gently to avoid breaking the paneer. If desired, add fresh cream for a richer texture.

Final Cooking
Let the paneer simmer in the gravy for about 5 minutes on low heat to absorb the flavors.
