Spinach Gravy

Method

Preparation of Spinach Gravy

  1. 1

    Blanch Spinach

Boil a pot of water and add the fresh spinach leaves. Blanch for about 2-3 minutes until wilted. Drain and immediately transfer to ice-cold water to retain the green color. Once cooled, drain again and blend into a smooth paste.

  2. 2

    Cook Spices

In a pan, heat oil or ghee over medium heat. Add cumin seeds and let them splutter. Then add finely chopped onion and sauté until golden brown.

  3. 3

    Add Tomato and Spices

Add chopped tomato, ginger-garlic paste, and green chili. Cook until the tomato is soft. Then add turmeric powder, red chili powder, and salt. Stir well and cook for another 2-3 minutes.

  4. 4

    Combine Spinach

Add the blended spinach paste to the pan and mix thoroughly. Cook for 5-7 minutes on low medium heat until the oil starts to separate from the gravy.

  5. 5

    Finish with Garam Masala

Add garam masala and kasuri methi. Stir well and cook for another 2 minutes. Adjust salt to taste.

Preparing Paneer

  1. 6

    Prepare Paneer

Cut the paneer into cubes. If using fresh cream, keep it aside.

  2. 7

    Combine Paneer with Gravy

Add the paneer cubes to the prepared spinach gravy. Stir gently to avoid breaking the paneer. If desired, add fresh cream for a richer texture.

  3. 8

    Final Cooking

Let the paneer simmer in the gravy for about 5 minutes on low heat to absorb the flavors.
