    Prepare the Ingredients

    In a large bowl, clean and cut the lamb shoulder into 1.5-inch cubes. Finely chop the onions, mince the garlic, and grate the ginger. Chop the tomatoes and slit the green chili.

Cooking

    Sauté the Aromatics

    In a large pot or Dutch oven, heat the vegetable oil over medium heat. Add the cumin seeds and sauté until they start to splutter. Add the finely chopped onions and cook until they turn golden brown.

    Add Garlic and Ginger

    Stir in the minced garlic and grated ginger. Sauté for an additional 2-3 minutes until fragrant.

    Incorporate Spices

    Add the coriander powder, turmeric powder, red chili powder, and salt (to taste) to the pot. Mix well and cook for 1-2 minutes.

    Add Lamb and Tomatoes

    Introduce the cubed lamb and chopped tomatoes to the pot. Stir to coat the lamb in the spice mixture. Cook for about 5 minutes, allowing the lamb to brown slightly.

    Cook the Curry

    Pour in the water and add the slit green chili. Bring to a boil, then reduce the heat to low. Cover the pot and let it simmer for 1.5 to 2 hours, or until the lamb is tender and the gravy thickens. Stir occasionally.

    Finish with Garam Masala

    Once the lamb is tender, stir in the garam masala and let it cook for an additional 10 minutes.

Garnishing

    Serve the Curry

    Remove the pot from the heat. Garnish the lamb curry with fresh chopped cilantro before serving.
