Mixing the Dry Ingredients
In a large mixing bowl, combine the all-purpose flour, baking powder, sugar, and salt. Mix well until all the dry ingredients are evenly distributed.

Combining Wet Ingredients
Add the yogurt and warm water to the dry ingredients. Mix until the dough starts to come together.

Kneading the Dough
Add the oil or ghee to the dough and knead it for about 8-10 minutes until it becomes soft and elastic. If the dough is too sticky, sprinkle a little more flour as needed.

Resting the Dough
Cover the dough with a damp cloth or plastic wrap and let it rest for at least 2 hours at room temperature. This helps the dough to rise and become fluffy.

Preparing the Oil
In a deep frying pan or wok, heat oil over medium-high heat. To check if the oil is hot enough, drop a small piece of dough into the oil; if it bubbles and rises to the surface, the oil is ready.

Rolling the Bhatura
Once the dough has rested, divide it into equal portions (about 6-8 balls). On a lightly floured surface, roll each ball into a circle about 6 inches in diameter, ensuring they are not too thick.

Frying the Bhatura
Carefully slide one rolled bhatura into the hot oil. It should puff up immediately. Fry until golden brown on both sides, about 1-2 minutes per side. Use a slotted spoon to remove and drain excess oil on paper towels.

Serve the bhaturas hot with chole (chickpea curry) or any curry of your choice. Enjoy!
