Prepare the Beef
Cut the beef chuck roast into bite-sized cubes, about 1 inch in size. Season with salt and black pepper.

Sear the Beef
In a large pot or Dutch oven, heat the vegetable oil over medium-high heat. Add the beef cubes in batches and sear until browned on all sides. Remove the beef and set aside.

Add Spices
Sprinkle in the curry powder, cumin, coriander, turmeric, and red chili flakes. Stir to coat the vegetables and cook for 2 minutes.

Combine Ingredients
Return the seared beef to the pot and add the tomato paste, coconut milk, and beef broth. Stir well to combine all ingredients.

Simmer
Bring the curry to a boil, then reduce the heat to low. Cover and simmer for about 1.5 to 2 hours, or until the beef is tender.

Serve
Taste and adjust seasoning with salt and black pepper as needed. Serve hot with rice or naan.
