Preparation

  1. 1

    Prepare the Beef

Cut the beef chuck roast into bite-sized cubes, about 1 inch in size. Season with salt and black pepper.

  2. 2

    Chop Vegetables

Dice the onion, mince the garlic, and grate the ginger. Chop the carrots and potatoes into cubes and slice the bell pepper.

Cooking

  1. 3

    Sear the Beef

In a large pot or Dutch oven, heat the vegetable oil over medium-high heat. Add the beef cubes in batches and sear until browned on all sides. Remove the beef and set aside.

  2. 4

    Sauté the Aromatics

In the same pot, add the onion, garlic, and ginger. Sauté for about 3-4 minutes until the onion is translucent.

  3. 5

    Add the Vegetables

Add the chopped carrots, potatoes, and bell pepper to the pot. Stir and cook for another 5 minutes.

  4. 6

    Add Spices

Sprinkle in the curry powder, cumin, coriander, turmeric, and red chili flakes. Stir to coat the vegetables and cook for 2 minutes.

  5. 7

    Combine Ingredients

Return the seared beef to the pot and add the tomato paste, coconut milk, and beef broth. Stir well to combine all ingredients.

  6. 8

    Simmer

Bring the curry to a boil, then reduce the heat to low. Cover and simmer for about 1.5 to 2 hours, or until the beef is tender.

  7. 9

    Serve

Taste and adjust seasoning with salt and black pepper as needed. Serve hot with rice or naan.
