Dough Preparation

Mix Dry Ingredients
In a large mixing bowl, combine the all-purpose flour, salt, and baking powder. Mix well.

Add Wet Ingredients
Make a well in the center and add yogurt, water, and oil. Mix until a soft dough forms.

Knead the Dough
Knead the dough on a floured surface for about 5-7 minutes until smooth. Cover with a damp cloth and let it rest for 30 minutes.

Prepare Filling
In a bowl, combine the boiled and mashed potatoes, cumin seeds, green chilies, ginger, coriander powder, garam masala, salt, and fresh coriander leaves. Mix well until all ingredients are evenly combined.
Making Aloo Kulcha

Divide and Roll
After the dough has rested, divide it into equal portions. Roll each portion into a small ball, then flatten it slightly.

Stuff the Filling
Place a spoonful of the potato filling in the center of each flattened dough. Bring the edges together and pinch to seal the filling inside. Flatten gently.

Roll Out the Kulcha
Dust the stuffed dough ball with flour and roll it out into a circle about 6-8 inches in diameter.

Serve hot with yogurt or pickle on the side.
