Brew the espresso and allow it to cool. Once cooled, mix in the dark rum or coffee liqueur.

In a mixing bowl, whisk together the mascarpone cheese, granulated sugar, and vanilla extract until smooth.

In a separate bowl, whip the heavy cream until soft peaks form. Gently fold the whipped cream into the mascarpone mixture.

Dip each ladyfinger in the coffee mixture briefly (do not soak), and layer half of them in the bottom of a serving dish. Spread half of the mascarpone mixture over the ladyfingers, then repeat with another layer of dipped ladyfingers and the remaining mascarpone mixture.

Assemble the Tiramisu

Cover and refrigerate the tiramisu for at least 4 hours, preferably overnight. Before serving, dust the top with cocoa powder.

Preheat your oven to 200°C (400°F). Grease four ramekins with butter and dust with flour.

In a microwave-safe bowl, combine dark chocolate and unsalted butter. Microwave in 30-second intervals, stirring in between, until fully melted and smooth.

In a separate bowl, whisk together granulated sugar, large eggs, and large egg yolk until the mixture is light and frothy.

Slowly pour the melted chocolate mixture into the egg mixture, stirring constantly to combine.

Sift in the all-purpose flour, add vanilla extract, and a pinch of salt. Fold gently until just combined.

Divide the batter evenly among the prepared ramekins, filling each about 3/4 full.

Bake in the preheated oven for 12-14 minutes until the edges are firm but the center is soft.

Let the cakes cool for 1 minute, then carefully invert onto plates. Serve immediately, optionally with ice cream or whipped cream.

Remove the ribeye steaks from the refrigerator and let them sit at room temperature for about 30 minutes before cooking. Season both sides with salt and black pepper.

In a small bowl, mix together olive oil, lemon juice, minced garlic, salt, and black pepper.

Carefully add calamari rings in batches to the hot oil. Fry for about 2-3 minutes or until golden brown and crispy. Remove with a slotted spoon and drain on paper towels.
