Method
Preparing the Catfish

Marinate the Fillets
In a medium bowl, combine the buttermilk and hot sauce. Add the catfish fillets and ensure they are fully submerged. Cover and refrigerate for at least 30 minutes.

Mix the Dry Ingredients
In a shallow dish, mix together the cornmeal, all-purpose flour, paprika, garlic powder, onion powder, cayenne pepper, salt, and black pepper until well combined.
Frying the Catfish

Heat the Oil
In a large skillet, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Coat the Fillets
Remove the marinated catfish fillets from the buttermilk mixture, allowing excess to drip off. Dredge each fillet in the breading mix, pressing lightly to ensure the coating sticks.

Fry the Catfish
Carefully place the coated fillets in the hot oil. Fry for about 4-5 minutes on each side or until golden brown and cooked through. Use a slotted spoon to remove the fillets and drain on paper towels.
Serving the Dish

Serve the fried catfish fillets hot, alongside your choice of coleslaw and hush puppies. Include dinner rolls on the side.
