Prepare the Ingredients

    Cook the Bacon

    In a skillet over medium heat, cook the bacon slices until crispy, about 6-8 minutes. Remove from skillet and place on paper towels to drain excess grease.

    In a bowl, crack the eggs and whisk them until well combined. In the same skillet used for bacon (with some drippings left for flavor), pour in the eggs. Cook over medium-low heat, stirring gently until just set, about 3-4 minutes.

    Heat the Refried Beans

    In a small pot over low heat, warm the refried beans until heated through, stirring occasionally.

    Prepare the Hashbrowns

    In another skillet over medium-high heat, add the frozen hashbrowns. Cook until golden and crispy, about 5-7 minutes, flipping occasionally.

Assemble the Tacos

    On each flour tortilla, spread a layer of warm refried beans. Add a generous portion of scrambled eggs, top with crumbled bacon, and sprinkle with Cheddar cheese.

    Fold the sides of the tortillas over the filling and then roll them up from the bottom to secure the filling inside.
