For the Chicken Fried Steak

    Prepare the Steak

    Pound the beef round steak to about 1/2 inch thickness using a meat mallet. Season both sides with salt, black pepper, and paprika.

    Dredge the Steak

    Set up a dredging station with two shallow bowls: one with buttermilk and the other with all-purpose flour. Dip each piece of steak into the buttermilk, allowing excess to drip off, then coat with flour, pressing gently to adhere.

    Fry the Steak

    In a large skillet, heat vegetable oil over medium-high heat. Carefully add the breaded steaks and fry for about 4-5 minutes on each side until golden brown and cooked through. Remove and drain on paper towels.

    In the same skillet used for the steak, reduce heat to medium and add butter. Once melted, whisk in the flour and cook for about 1-2 minutes until lightly browned.

    Gradually whisk in the milk, stirring constantly to prevent lumps. Cook until the gravy thickens, about 3-5 minutes, then season with salt and black pepper.

    In a separate pan, cook the bacon slices until crispy. Set aside.

    Prepare the Biscuits and Eggs

    Toast the buttermilk biscuits. In the same skillet, fry the two eggs over medium heat until the whites are set, and the yolks are still runny.

    Assemble the Dish

    Place a biscuit on each plate, top with a piece of chicken fried steak, an egg, a sprinkle of Cheddar cheese, and drizzle generously with country gravy. Add crispy bacon on the side or on top as desired.
