Preparation

    Preheat the Oven

    Preheat your oven to 400°F (200°C).

    Prepare the Potatoes

    Wash the Russet potatoes thoroughly under running water. Pat them dry with a towel. Using a fork, poke several holes in each potato to allow steam to escape while baking.

    Bake the Potatoes

    Place the potatoes directly on the oven rack and bake for about 45-60 minutes, or until they are tender when pierced with a fork.

    Cool and Cut

    Once baked, remove the potatoes from the oven and allow them to cool for about 10 minutes. Cut each potato in half lengthwise and carefully scoop out most of the flesh, leaving about 1/4 inch of potato on the skin.

Assembly

    Season the Potato Skins

    Brush the insides of the potato skins with olive oil and season with salt and pepper.

    Add Fillings

    Sprinkle shredded cheddar cheese, bacon bits, diced tomatoes, and chopped chives inside each potato skin.

Baking

    Bake Again

    Place the filled potato skins on a baking sheet and return them to the oven. Bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.

    Serve

    Remove from the oven and let cool for a few minutes. Serve warm with a side of sour cream and salsa.
