Preparing the Pork Tenderloin

Prepare the Pork
Trim any excess fat from the pork tenderloin if necessary. Cut the tenderloin into 1-inch thick slices.

Season the Pork
In a small bowl, combine salt, black pepper, and garlic powder. Rub this spice mixture all over the pork slices and let them marinate for 15 minutes.

Bread the Pork
Dredge each pork slice in flour, shaking off the excess. Dip into the egg mixture, then coat with breadcrumbs, pressing gently to adhere.
Frying the Pork

Heat the Oil
In a large, deep skillet, heat vegetable oil over medium-high heat until it reaches about 350°F (175°C).

Fry the Pork
Carefully add the breaded pork slices to the hot oil, frying in batches if necessary to avoid overcrowding. Fry for about 3-4 minutes on each side, or until golden brown and cooked through.

Drain Excess Oil
Once cooked, transfer the fried pork to a paper towel-lined plate to drain off excess oil.
Assembling the Sandwich

Prepare the Vegetables
While the pork is frying, slice the tomato and red onion thinly. Keep the lettuce leaves whole.

Assemble the Sandwich
On the bottom half of each hamburger bun, layer with lettuce, a slice of fried pork, tomato slices, pickles, and red onion. Top with the other half of the bun.

Serve the pork tenderloin sandwiches immediately while hot, with your favorite side of fries or chips.
