Sandwich Assembly
Method
Preparing the Shrimp
- 1
Prepare the Shrimp Coating
In a large bowl, mix together the flour, cornstarch, Cajun seasoning, salt, and black pepper.
- 2
Prepare the Buttermilk Mixture
In another bowl, whisk together the eggs and buttermilk until well combined.
- 3
Coat the Shrimp
Dip each shrimp into the buttermilk mixture, allowing excess to drip off, then dredge in the flour mixture until well-coated.
Frying the Shrimp
- 4
Heat the Oil
In a deep skillet or frying pan, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).
- 5
Fry the Shrimp
Working in batches, fry the shrimp for about 2-3 minutes or until golden brown and cooked through. Remove and drain on paper towels.
Assembling the Sandwich
- 6
Prepare the Rolls
Slice the French rolls in half lengthwise, but do not cut all the way through.
- 7
Add the Fillings
Spread a layer of spicy remoulade sauce on the inside of each roll, then add a generous amount of fried shrimp, followed by shredded lettuce and tomato slices.
- 8
Serve
Close the sandwich and serve immediately with extra remoulade on the side.
