Crust Preparation

    Make the Dough

    In a large mixing bowl, combine the all-purpose flour, granulated sugar, and salt. Cut in the unsalted butter until the mixture resembles coarse crumbs.

    Add Ice Water

    Gradually add ice water, one tablespoon at a time, mixing until the dough just comes together. Do not overwork the dough.

    Chill the Dough

    Shape the dough into a disk, wrap it in plastic wrap, and refrigerate for at least 30 minutes.

Filling Preparation

    Prepare the Fruit

    Wash and peel (if necessary) the fresh fruit. Cut into slices or chunks as appropriate for the type of fruit used.

    Mix the Filling

    In a large mixing bowl, combine the prepared fruit, granulated sugar, cornstarch, ground cinnamon, lemon juice, and vanilla extract. Toss to coat the fruit evenly.

Assembly and Baking

    Preheat your oven to 425°F (220°C).

    On a lightly floured surface, roll out the chilled dough to fit your pie dish. Place the rolled dough into the pie dish, trimming any excess.
