Method

Preparation

  1. 1

    Prepare the Liver

Rinse the beef liver under cold water and pat dry with paper towels. Slice the liver into thin strips, about 1/4 inch thick. Season both sides with salt and black pepper.

  2. 2

    Slice the Onions

Peel and slice the onions into thin rings. Set aside.

  3. 3

    Cook the Bacon

In a large skillet, cook the bacon strips over medium heat until crispy. Remove the bacon from the skillet and place on paper towels to drain. Leave the bacon fat in the skillet.

Cooking

  1. 4

    Sauté the Onions

In the same skillet with the bacon fat, add the sliced onions. Sauté over medium heat for about 10 minutes, or until they are softened and caramelized. Remove from the skillet and set aside.

  2. 5

    Coat the Liver

In a shallow dish, place the flour. Dredge the liver strips in the flour, shaking off any excess.

  3. 6

    Cook the Liver

In the same skillet, add olive oil and heat over medium-high heat. Add the coated liver strips and cook for about 3-4 minutes on each side, or until browned and cooked through. Avoid overcooking to prevent toughness.

  4. 7

    Combine Ingredients

Once the liver is cooked, add the sautéed onions back to the skillet with the liver. Toss gently to combine and heat through.

Serving

  1. 8

    Plate the Dish

Serve the liver and onions on a plate. Top with crispy bacon strips. Serve with a side of mashed potatoes, brown gravy, and your choice of side dish. Include a dinner roll on the side.
