Prepare the Liver
Rinse the beef liver under cold water and pat dry with paper towels. Slice the liver into thin strips, about 1/4 inch thick. Season both sides with salt and black pepper.

Slice the Onions
Peel and slice the onions into thin rings. Set aside.

Cook the Bacon
In a large skillet, cook the bacon strips over medium heat until crispy. Remove the bacon from the skillet and place on paper towels to drain. Leave the bacon fat in the skillet.

Coat the Liver
In a shallow dish, place the flour. Dredge the liver strips in the flour, shaking off any excess.
