Method

For the Pork Chops

  1. 1

    Prepare the Marinade

In a small bowl, mix together olive oil, garlic powder, paprika, salt, black pepper, and chopped fresh rosemary.

  2. 2

    Marinate the Pork Chops

Rub the marinade all over the pork chops. Let them marinate for at least 30 minutes (or up to 2 hours in the refrigerator for more flavor).

  3. 3

    Grill the Pork Chops

Preheat the grill to medium-high heat. Grill the pork chops for about 6-7 minutes on each side, or until they reach an internal temperature of 145°F (63°C).

For the Side Vegetables

  1. 4

    Prepare the Vegetables

Wash and cut the zucchini into thick slices, chop the red bell pepper into bite-sized pieces, and trim the asparagus.

  2. 5

    Season the Vegetables

In a large bowl, toss the vegetables with olive oil, salt, and black pepper until evenly coated.

  3. 6

    Grill the Vegetables

Place the vegetables on the grill alongside the pork chops and cook for about 5-7 minutes, turning occasionally, until charred and tender.

For the Garlic Mashed Potatoes

  1. 7

    Boil the Potatoes

Peel and cut the potatoes into chunks. Place them in a large pot, cover with water, add salt, and boil until fork-tender, about 15-20 minutes.

  2. 8

    Prepare the Garlic

While the potatoes are boiling, peel and finely chop the garlic cloves.

  3. 9

    Mash the Potatoes

Drain the potatoes and return them to the pot. Add butter, chopped garlic, milk, salt, and black pepper. Mash until smooth and creamy.
