For the Fried Catfish

Prepare the Catfish
Rinse the catfish fillets under cold water and pat them dry with paper towels.

Make the Breading
In a bowl, combine the cornmeal, all-purpose flour, salt, black pepper, and cayenne pepper. Mix well to create the breading.

Dunk in Buttermilk
Dip each catfish fillet into the buttermilk, ensuring they are fully coated.

Bread the Catfish
After coating in buttermilk, dredge each fillet in the cornmeal mixture, pressing gently to ensure the coating sticks.

Heat the Oil
In a large skillet, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Fry the Catfish
Carefully place the breaded catfish fillets into the hot oil, frying them for about 3-4 minutes on each side or until golden brown and cooked through.

Drain and Rest
Once cooked, remove the fillets from the oil and place them on a paper towel-lined plate to drain any excess oil.

Prepare the Ingredients
Slice the tomatoes and onion thinly. Wash and dry the lettuce leaves.

Assemble the Sandwich
On each French roll, lay one fried catfish fillet. Top with a lettuce leaf, a few slices of tomato, some onion rings, and pickles.

Add Tartar Sauce
Drizzle or spread tartar sauce over the toppings on each sandwich.

Close the sandwich with the top half of the French roll and serve immediately with extra tartar sauce on the side.
