Prepare Tartar Sauce

Make the Tartar Sauce
In a medium bowl, combine mayonnaise, chopped dill pickles, lemon juice, and capers. Mix well until fully combined. Season with salt and black pepper to taste. Cover and set aside in the refrigerator until ready to serve.

Prepare the Battering Mixture
In a large mixing bowl, whisk together all-purpose flour, cornstarch, baking powder, salt, and black pepper.

Make the Batter
Gradually add cold water to the dry ingredients, whisking until smooth and free of lumps.

Heat Oil
In a large pot or deep skillet, heat vegetable oil over medium-high heat until it reaches 350°F (175°C). Use a thermometer for accuracy.

Batter and Fry the Cod
Dip each cod fillet into the batter, allowing excess to drip off. Carefully place them into the hot oil. Fry for about 5-7 minutes or until golden brown and cooked through. Use a slotted spoon to remove the fish and drain on paper towels.
Assemble Sandwich

Prepare the Hoagie Rolls
Slice each hoagie roll lengthwise, but do not cut all the way through.

Assemble the Sandwich
On the bottom half of each roll, layer shredded lettuce, sliced tomatoes, and sliced onions. Place a piece of battered cod on top of the vegetables, then add a generous dollop of the prepared tartar sauce. Close the hoagie and serve immediately.
