For the Battered Cod

Prepare the batter
In a large bowl, combine the all-purpose flour, cornstarch, baking powder, salt, and pepper. Gradually whisk in the cold sparkling water until the batter is smooth and free of lumps. Set aside.

Heat the oil
In a deep-fryer or large pot, heat the oil over medium-high heat until it reaches 350°F (175°C).

Batter and fry the cod
Dip each cod fillet into the batter, allowing excess to drip off. Carefully place the battered cod into the hot oil and fry for about 4–5 minutes or until golden brown and cooked through. Remove and drain on paper towels.
For the Diner Fries

Prep the potatoes
Peel the russet potatoes and cut them into thick fries. Rinse under cold water to remove excess starch, then pat dry with paper towels.

Heat the oil
In a deep-fryer or large pot, heat the oil over medium-high heat until it reaches 350°F (175°C).

Fry the potatoes
Fry the potatoes in batches for about 5–7 minutes until they are golden brown and crispy. Remove and drain on paper towels, then season with salt immediately.
For the Coleslaw

Combine ingredients
In a large bowl, combine the shredded cabbage, grated carrot, mayonnaise, apple cider vinegar, sugar, salt, and pepper. Mix well until all vegetables are coated with the dressing.

Chill
Cover the coleslaw and refrigerate for at least 30 minutes before serving to allow the flavors to meld.
For the Tartar Sauce

Mix the sauce
In a small bowl, combine the mayonnaise, finely chopped dill pickles, capers, lemon juice, salt, and pepper. Mix well until smooth.

Refrigerate the tartar sauce for at least 30 minutes before serving to enhance flavor.
