    Prepare the Fries

    Preheat the oven or fryer according to the package instructions for the frozen French fries.

    Cook the Fries

    Spread the frozen French fries on a baking sheet or place in the fryer. Drizzle with vegetable oil and sprinkle with salt. Bake or fry until golden brown and crispy, according to package directions (usually about 20-30 minutes).

    Keep Warm

    Once cooked, remove the fries from the oven or fryer and set aside in a warm place while you prepare the pork green chile.

Pork Green Chile

    Sauté the Vegetables

    In a large pot, heat a tablespoon of oil over medium heat. Add the chopped onion and garlic, sautéing until they are translucent, about 5 minutes.

    Brown the Pork

    Add the diced pork shoulder to the pot, stirring occasionally until browned on all sides, about 8-10 minutes.

    Add Remaining Ingredients

    Stir in the diced green chilies, chicken broth, cumin, oregano, salt, and black pepper. Bring to a simmer.

    Simmer

    Reduce heat to low and let the mixture simmer for about 45 minutes, or until the pork is tender and the flavors meld together. Stir occasionally.

Assembly

    Assemble the Fries

    On a large serving platter, layer the cooked fries evenly. Spoon the pork green chile generously over the fries.

    Add Toppings

    Sprinkle shredded Pepperjack cheese over the hot green chile. Let it melt slightly, then garnish with chopped cilantro and a dollop of sour cream to taste.
