Method

Pot Roast Preparation

    Season the Roast

    Rub the chuck roast with salt and black pepper on all sides.

    Sear the Roast

    In a large pot, heat the olive oil over medium-high heat. Once hot, sear the roast on all sides until browned, about 3-4 minutes per side. Remove the roast and set aside.

    Sauté Vegetables

    In the same pot, add chopped onion, sliced carrots, and quartered potatoes. Sauté for about 5-7 minutes until slightly softened.

    Add Garlic and Herbs

    Mince the garlic and add it to the pot along with bay leaves and thyme. Stir to combine.

    Add Broth and Roast

    Return the seared roast to the pot. Pour in the beef broth until the roast is covered. Bring to a boil.

    Simmer

    Reduce heat to low, cover, and let it simmer for 6-8 hours, or until the meat is tender.

Mashed Potatoes Preparation

    Boil the Potatoes

    Peel and cut the potatoes into quarters. Place them in a pot of salted water and bring to a boil. Cook until fork-tender, about 15-20 minutes.

    Mash the Potatoes

    Drain the potatoes and return them to the pot. Add butter, milk, salt, and pepper. Mash until smooth and creamy.

Brown Gravy Preparation

    Prepare the Drippings

    Once the pot roast is done, remove the roast and set it aside to rest. Pour the drippings from the pot into a measuring cup.

    Make the Roux

    In a saucepan, heat the drippings over medium heat. Stir in the flour and cook for about 2 minutes until golden brown.

    Add Broth

    Gradually whisk in the beef broth. Bring to a simmer and cook until thickened, about 5-10 minutes. Season with salt and pepper to taste.
