Prepare Chicken
Slice the chicken breasts into strips, about 1 inch wide.

Marinate
In a bowl, mix buttermilk with a pinch of salt and black pepper. Add chicken strips and marinate for at least 30 minutes in the refrigerator.

Bread the Chicken
Remove chicken from the marinade, allowing excess buttermilk to drip off. Dredge each strip in flour, then dip in beaten eggs, and finally coat in the bread crumb mixture.

Fry the Chicken
In a large skillet, heat oil over medium-high heat. Fry chicken tenders in batches, about 3-4 minutes on each side, until golden brown and cooked through. Drain on paper towels.

Mix Dressing
In a bowl, combine mayonnaise, apple cider vinegar, sugar, salt, and black pepper to make the dressing.

Mix the shredded cabbage and carrots with the dressing in a large bowl. Toss well to combine and refrigerate for at least 20 minutes before serving.
