Prepare the Fries

Fry the Frozen French Fries
Heat vegetable oil in a deep fryer or a large pot over medium-high heat. Once the oil is hot, carefully add the frozen French fries in batches to avoid overcrowding.

Cook Until Golden Brown
Fry the fries for 5-7 minutes or until they are golden brown and crispy. Use a slotted spoon to remove them from the oil and place them on a paper towel-lined plate to drain excess oil.

Season with Salt
While the fries are still hot, sprinkle salt over them to taste.

Add Flour to Create a Roux
Whisk in the all-purpose flour and cook for 1-2 minutes until the mixture is slightly golden, creating a roux.

Gradually Add Milk
Slowly pour in the milk while whisking constantly to avoid lumps. Cook the mixture until it thickens, about 3-5 minutes.

Add Cheeses and Seasonings
Stir in the shredded cheddar cheese and cream cheese until fully melted and smooth. Mix in the jalapeños (if using), paprika, and salt.

If the cheese sauce is too thick, add a little more milk until you reach your desired consistency.
