Method

Main Dish Preparation

  1. 1

    Prepare the Salmon

In a bowl, mix together olive oil, lemon juice, garlic powder, salt, and black pepper. Add the Atlantic salmon fillets and coat them with the marinade. Let marinate for 15-30 minutes.

  2. 2

    Grill the Salmon

Preheat the grill to medium-high heat. Place the marinated salmon fillets on the grill. Cook for 4-6 minutes on each side, or until the salmon flakes easily with a fork. If using, sprinkle fresh dill on top just before serving.

Side Dishes Preparation

  1. 3

    Prepare the Quinoa

Rinse the quinoa under cold water. In a saucepan, combine the rinsed quinoa and vegetable broth. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes or until the quinoa is fluffy and the broth is absorbed.

  2. 4

    Grill the Asparagus and Tomatoes

While the quinoa is cooking, toss the asparagus and cherry tomatoes with olive oil, salt, and pepper. Grill them for about 5-7 minutes until the asparagus is tender and tomatoes are slightly blistered.

Serving

  1. 5

    Plate the Meal

On a plate, serve a grilled salmon fillet alongside a scoop of quinoa, grilled asparagus, and cherry tomatoes. Add a dinner roll on the side.
