French Onion Agnolotti Recipe

    Caramelize the Onions

    In a large skillet, melt the butter over medium heat. Add the sliced yellow onions and cook, stirring occasionally, until they are golden brown and caramelized, about 25-30 minutes.

    Add Broth and Cream

    Once the onions are caramelized, add the beef broth and heavy cream. Stir well and let it simmer for another 10 minutes until slightly thickened.

    Mix in Cheese and Seasoning

    Remove the mixture from heat, and stir in the Gruyère cheese until melted. Season with salt and black pepper to taste. Let the filling cool.

    Make the Agnolotti Dough

    In a large bowl, mix 2 cups of all-purpose flour with 3 large eggs and a pinch of salt. Knead until smooth, wrap in plastic wrap, and let rest for 30 minutes.

    Roll and Fill the Dough

    Roll out the dough thinly, then cut into squares. Place a small spoonful of the filling in the center of each square, fold over to form triangles, and seal the edges with a fork.

    Cook the Agnolotti

    Bring a large pot of salted water to a boil. Gently drop the agnolotti into the boiling water and cook for about 3-4 minutes until they float to the surface.

    Serve

    Drain the agnolotti and serve with extra grated Gruyère cheese and a drizzle of the remaining beef broth.
