Preparation

    Prepare the Marinade

    In a bowl, mix together olive oil, lemon juice, minced garlic, salt, and black pepper to create the marinade for the salmon.

    Marinate the Salmon

    Place the salmon fillets in a shallow dish and pour the marinade over them. Ensure that each fillet is well coated. Cover and refrigerate for at least 30 minutes.

Cooking the Rice

    Cook the Rice

    In a medium saucepan, combine the white rice, water, and salt. Bring to a boil, then reduce the heat to low. Cover and simmer for 15-20 minutes, or until the rice is tender and the water is absorbed. Remove from heat and let it sit covered for 5 minutes.

Grilling the Salmon and Vegetables

    Prepare the Vegetables

    Wash and slice the zucchini and bell pepper into strips. Trim the ends of the asparagus. In a bowl, toss the vegetables with olive oil, salt, and black pepper.

    Preheat the Grill

    Preheat your grill to medium-high heat.

    Remove the salmon from the marinade and place it skin-side down on the grill. Grill for about 6-8 minutes per side, depending on thickness, until the salmon flakes easily with a fork.
