Preparing the Potatoes

    Preheat the Oven

    Preheat your oven to 400°F (200°C).

    Wash the Potatoes

    Scrub the russet potatoes under cold water until clean. Pat them dry with a paper towel.

    Bake the Potatoes

    Place the potatoes directly on the oven rack and bake for 45-60 minutes, or until tender. Remove from the oven and let cool slightly.

    Scoop Out the Flesh

    Once cool enough to handle, cut each potato in half lengthwise and scoop out a portion of the flesh, leaving about 1/4 inch of potato on the skin.

Preparing the Skins

    Season the Skins

    Brush the insides of the potato skins with olive oil and sprinkle with salt and black pepper.

    Bake Again

    Place the potato skins on a baking sheet, cut side up. Bake for an additional 10-15 minutes, or until the edges are crispy.

Adding Toppings

    Add Cheese and Bacon

    Sprinkle a generous amount of shredded cheddar cheese and crumbled bacon into each potato skin.

    Final Bake

    Return the loaded potato skins to the oven and bake for an additional 5-10 minutes, or until the cheese is melted and bubbly.

    Garnish

    Remove from the oven and top with chopped green onions.

Serving

    Serve with Sour Cream

    Serve the loaded potato skins warm with a side of sour cream for dipping.
