Preparing the Potatoes

Preheat the Oven
Preheat your oven to 400°F (200°C).

Bake the Potatoes
Place the potatoes directly on the oven rack and bake for 45-60 minutes, or until tender. Remove from the oven and let cool slightly.

Scoop Out the Flesh
Once cool enough to handle, cut each potato in half lengthwise and scoop out a portion of the flesh, leaving about 1/4 inch of potato on the skin.

Bake Again
Place the potato skins on a baking sheet, cut side up. Bake for an additional 10-15 minutes, or until the edges are crispy.
Adding Toppings

Add Cheese and Bacon
Sprinkle a generous amount of shredded cheddar cheese and crumbled bacon into each potato skin.

Final Bake
Return the loaded potato skins to the oven and bake for an additional 5-10 minutes, or until the cheese is melted and bubbly.

Remove from the oven and top with chopped green onions.
