Sauté the Aromatics
In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 5 minutes. Add the minced garlic and red pepper flakes, and cook for an additional 2 minutes.

Add the Greens and Broth
Stir in the chopped collard greens, smoked ham hock, and pour in the chicken broth. Bring the mixture to a boil.

Slow Cook
Once boiling, reduce the heat to low. Cover the pot and let it simmer for about 1 to 1.5 hours, stirring occasionally, until the greens are tender.

Season and Serve
Remove the ham hock, shred any meat off the bone, and return the meat to the pot. Taste and adjust the seasoning with salt and black pepper as needed. Serve warm.
