Prepare the Chicken
Rinse the chicken pieces under cold water and pat dry with paper towels.
Make the Coating
In a large mixing bowl, combine the flour, cornstarch, baking powder, salt, black pepper, garlic powder, onion powder, and paprika. Mix well.
Coat the Chicken
Dip each piece of chicken into the wet mixture, allowing excess to drip off, then coat with the dry mixture. Press the flour mixture onto the chicken to ensure it adheres well.
Heat the Oil
In a large skillet or deep frying pan, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).
Fry the Chicken
Carefully place the coated chicken pieces into the hot oil. Fry in batches to avoid overcrowding. Cook for 12-15 minutes, turning occasionally, until golden brown and cooked through (internal temperature should reach 165°F or 74°C).
Drain and Serve
Remove the fried chicken from the oil and place on paper towels to drain excess oil. Serve hot with your choice of dipping sauce.
