Marinate the Chicken
Place the chicken thighs and legs in a bowl and pour buttermilk over them. Ensure the chicken is well coated. Cover and refrigerate for at least 2 hours or overnight for best results.

Prepare the Breading Mixture
In a large bowl, combine the all-purpose flour, cornstarch, paprika, garlic powder, onion powder, salt, black pepper, and cayenne pepper. Mix well until all ingredients are evenly distributed.

Heat the Oil
In a large, deep skillet or broaster, heat vegetable oil over medium-high heat until it reaches 350°F (175°C). Use a thermometer to ensure accurate temperature.

Bread the Chicken
Remove the marinated chicken from the refrigerator. Allow excess buttermilk to drip off, then dredge each piece in the breading mixture, pressing lightly to ensure an even coating.

Broast the Chicken
Carefully place the breaded chicken pieces into the hot oil, ensuring not to overcrowd the pan. Fry for about 12-15 minutes, turning occasionally until the chicken is golden brown and cooked through (internal temperature should reach 165°F or 74°C).

Once cooked, remove the chicken from the oil and place on a wire rack or paper towels to drain excess oil. Serve hot with your choice of sides.
