Onion Rings

    Prepare the Onions

    Peel the onions and slice them into 1/2 inch thick rings. Separate the rings and set aside.

    Make the Batter

    In a mixing bowl, combine flour, cornstarch, baking powder, salt, and black pepper. Gradually whisk in cold sparkling water until the batter is smooth.

    Fry the Onion Rings

    Heat vegetable oil in a deep pan to 375°F (190°C). Dip each onion ring in the batter and carefully place them in the hot oil. Fry until golden brown, about 3-5 minutes. Remove and drain on paper towels.

Boneless Wings

    Prepare the Chicken

    Cut the chicken breast into bite-sized pieces. Season with salt and black pepper.

    Make the Breading

    In one bowl, place flour. In another bowl, whisk together egg and milk.

    Coat the Chicken

    Dip each chicken piece in the flour, then in the egg mixture, and back in the flour to coat thoroughly.

    Fry the Chicken

    Heat vegetable oil in a deep pan to 375°F (190°C). Fry the chicken pieces in batches until golden brown and cooked through, about 5-7 minutes. Drain on paper towels.

    Add Sauce

    Toss the fried chicken pieces in hot sauce until well coated.

Cheese Quesadilla

    Prepare the Quesadilla

    Heat 1 tablespoon of vegetable oil in a skillet over medium heat. Place a tortilla in the skillet and sprinkle half of the cheddar and monterey jack cheese on one half of the tortilla.

    Cook the Quesadilla

    Fold the tortilla over the cheese and cook until golden brown, about 3-4 minutes. Flip and cook the other side until golden and the cheese is melted.

    Repeat

    Repeat the process for the remaining tortillas and cheese.

    Serve

    Cut the quesadilla into wedges and serve with sour cream and salsa.
