Preparation of Hash Browns

Cook the Hash Browns
In a large skillet, heat olive oil or butter over medium heat. Add the frozen hash browns, flattening them into an even layer. Cook for about 5-7 minutes on each side until golden brown and crispy. Remove from the pan and set aside.
Cooking Eggs and Sausage

Scramble the Eggs
In the same skillet, add the diced onion and breakfast sausage. Cook over medium heat until the sausage is browned and the onions are soft, about 5 minutes. In a bowl, whisk the eggs and pour them into the skillet. Stir gently to scramble until the eggs are cooked through. Remove from heat.
Making the Sausage Gravy

Prepare the Gravy
In a separate saucepan, cook the breakfast sausage over medium heat until browned. Sprinkle the flour over the sausage and mix well, cooking for an additional minute. Gradually whisk in the milk, stirring constantly until the gravy thickens. Season with salt and black pepper to taste.
Assembling the Skillet

Combine and Serve
In a serving plate, layer the crispy hash browns, then spoon over the scrambled eggs and sausage mixture. Pour a generous amount of sausage gravy over the top and sprinkle with shredded cheddar jack cheese. Serve hot.
