In a large skillet, heat vegetable oil over medium-high heat. Add the frozen hash browns and cook until crispy and golden brown, about 5-7 minutes, stirring occasionally. Once cooked, remove from skillet and set aside.

Scramble Eggs with Onion and Sausage
In the same skillet, add the crumbled breakfast sausage and diced onion. Cook over medium heat until the sausage is browned and the onion is translucent, about 5 minutes. In a bowl, whisk together the eggs, then pour them into the skillet. Stir gently to scramble until fully cooked, about 3-4 minutes.

In the same skillet, add the remaining breakfast sausage and cook until browned. Sprinkle the flour over the sausage, stirring to combine and cook for 1-2 minutes. Gradually whisk in the milk, ensuring no lumps form. Continue cooking until the gravy thickens, about 3-5 minutes. Season with salt and black pepper.
