Corned Beef Hash

    Cook the Potatoes

    In a medium pot, bring water to a boil. Add the diced potatoes and cook for about 8-10 minutes until tender. Drain and set aside.

    Sauté Vegetables

    In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until the onion is translucent.

    Combine Ingredients

    Add the cooked potatoes and shredded corned beef to the skillet. Season with salt, black pepper, and paprika. Cook, stirring occasionally, until the mixture is heated through and starts to brown, about 10-15 minutes.

    Garnish

    Remove from heat and sprinkle with chopped parsley before serving.

Eggs

    Cook the Eggs

    In a small non-stick skillet, melt 1 tablespoon of butter over medium heat. Crack the eggs into the skillet and cook to your desired doneness (sunny-side up, over-easy, etc.). This should take about 3-5 minutes.

Hashbrowns or Tater Barrels

    Prepare Hashbrowns or Tater Barrels

    Prepare frozen hashbrowns or tater barrels according to package instructions, usually baking or frying until golden brown and crispy.
