Prepare the Sweet Potatoes
Wash and peel the sweet potatoes. Cut them into waffle fry shapes using a waffle fry cutter or a knife.

Soak the Fries
Soak the cut sweet potatoes in cold water for at least 30 minutes. This helps to remove excess starch and makes them crispier.

Preheat the Oven
Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper.

Coat the Fries
Drain the sweet potatoes and pat them dry. In a large bowl, toss them with olive oil, salt, black pepper, paprika, garlic powder, and cornstarch until evenly coated.

Bake the Fries
Spread the sweet potato fries evenly on the prepared baking sheet in a single layer. Bake for 25-30 minutes, flipping halfway through, until they are golden brown and crispy.
