Method
Prepare the Chicken
- 1
Marinate the Chicken
In a bowl, combine olive oil, salt, black pepper, garlic powder, and paprika. Add the chicken breasts and jalapeño peppers (sliced). Make sure the chicken is well coated. Allow it to marinate for at least 30 minutes.
- 2
Cook the Chicken
You can either fry or grill the marinated chicken. If frying, heat a skillet over medium-high heat, add a bit of olive oil, and cook the chicken for about 6-7 minutes on each side or until fully cooked through. If grilling, preheat the grill and cook the chicken for about 6-8 minutes on each side. Remove from heat and let it rest before slicing.
Prepare the Salad
- 3
Chop the Lettuce
While the chicken is cooking, chop the iceberg and romaine lettuce into bite-sized pieces and place them in a large salad bowl.
- 4
Add the Toppings
Halve the cherry tomatoes and add them to the lettuce. Crumble the cooked bacon and sprinkle it over the salad. Finally, add shredded pepper jack cheese.
Assemble the Salad
- 5
Combine Ingredients
Once the chicken has rested, slice it into strips and place it on top of the salad. If desired, drizzle ranch dressing over the salad for an extra flavor boost.
