Chicken and Marinade

Batter and Frying

Method

Marinating the Chicken

  1. 1

    Prepare Marinade

In a large bowl, mix the buttermilk, hot sauce, salt, and black pepper together.

  2. 2

    Marinate Chicken

Add the chicken breasts to the marinade, ensuring they are fully submerged. Cover and refrigerate for at least 1 hour or up to overnight.

Preparing Jalapeños

  1. 3

    Slice Jalapeños

Remove stems and slice jalapeños into rings. Remove seeds if you prefer less heat.

Batter Preparation

  1. 4

    Make Batter

In a separate bowl, whisk together flour, cornstarch, baking powder, and a pinch of salt. In another bowl, beat the eggs and gradually mix in water until combined.

  2. 5

    Combine Mixtures

Slowly add the dry mixture to the wet mixture, stirring until a smooth batter forms.

Frying Chicken and Jalapeños

  1. 6

    Heat Oil

In a large heavy-bottomed pot or deep fryer, heat vegetable oil to 350°F (175°C).

  2. 7

    Batter and Fry Chicken

Remove marinated chicken from the fridge. Dip each piece into the batter, allowing excess to drip off. Carefully place in hot oil and fry for 6-8 minutes or until golden brown and cooked through.

  3. 8

    Fry Jalapeños

Using the same batter, dip jalapeño slices and fry in hot oil for 2-3 minutes until golden and crispy. Remove and drain on paper towels.

Cooking Sides

  1. 9

    Prepare Fries

Cook frozen French fries according to package instructions until crispy.

  2. 10

    Toast Texas Toast

Prepare Texas toast in the oven or toaster according to package directions.

Serving

  1. 11

    Plate the Dish

Serve the fried chicken alongside jalapeños, fries, and Texas toast. Accompany with your choice of cole slaw, cottage cheese, or a small salad.
