Wash and Cut Potatoes
Thoroughly wash the fresh potatoes under running water to remove any dirt. Cut each potato into uniform sticks or wedges, about 1/4 to 1/2 inch thick.

Heat the Oil
In a large frying pan or deep fryer, heat the high-quality vegetable oil to 350°F (175°C). Use a thermometer to check the temperature for optimal frying.

Dry Potatoes
After soaking, drain the water and thoroughly pat the potatoes dry with a clean kitchen towel. This step is crucial to avoid oil splatters.

Fry the Potatoes
Carefully add the dried potato sticks to the hot oil in batches, ensuring not to overcrowd the pan. Fry for about 5-7 minutes or until golden brown and crispy.

Drain and Season
Using a slotted spoon, remove the fries from the oil and place them on paper towels to drain excess oil. Immediately season with salt and pepper to taste while they are still hot.
