Prepare the Chicken

    Season the Chicken

    In a bowl, mix olive oil, salt, black pepper, and garlic powder. Coat the chicken breasts evenly with the mixture.

    Cook the Chicken

    You can either grill or fry the chicken. For grilling, preheat the grill to medium-high and cook for 6-7 minutes on each side or until fully cooked. For frying, heat a skillet over medium heat and cook for about 6-7 minutes on each side until golden brown and cooked through.

    Rest the Chicken

    Once cooked, remove the chicken from heat and let it rest for 5 minutes before slicing.

Prepare the Salad

    Chop the Lettuce

    Wash and chop the iceberg and romaine lettuce into bite-sized pieces. Place them in a large salad bowl.

    Cook the Bacon

    In a skillet over medium heat, cook the bacon slices until crispy. Remove from the skillet and drain on paper towels before chopping into pieces.

    Chop the Tomato

    Chop the medium tomato into small cubes and add it to the bowl with the lettuce.

    Add Cheese and Bacon

    Sprinkle the chopped bacon and pepper jack cheese over the salad base in the bowl.

Make the Dressing

    Combine Dressing Ingredients

    In a small bowl, whisk together olive oil, balsamic vinegar, Dijon mustard, honey, salt, and black pepper until well combined.

Assemble the Salad

    Combine Salad and Chicken

    Slice the rested chicken breast and place it on top of the salad. Drizzle the dressing over the salad and toss gently to combine.

    Serve the salad immediately, garnished with extra pepper jack cheese if desired.
