Preheat the oven to 375°F (190°C). Season the chicken breasts with jerk spice generously on both sides.

In a skillet over medium heat, cook the bacon until crispy. Remove and drain on paper towels, then chop into small pieces.

Prepare the Sauce
In a small saucepan, combine the tomato sauce, honey, and remaining jerk spice. Simmer on low heat for about 5 minutes, stirring occasionally.

Assemble the Dish
In a baking dish, place the seasoned chicken breasts. Top each piece with the sautéed red onion, diced pineapple, cooked bacon, and both types of cheese.

Pour the jerk-spiced tomato sauce evenly over the chicken and toppings.

Bake in the preheated oven for 25-30 minutes or until the chicken is cooked through and the cheese is melted and bubbly.
