Method
Bread Pudding Preparation
Prepare the Bread
Preheat your oven to 350°F (175°C). Tear the day-old bread into bite-sized pieces and place them in a large mixing bowl.
Mix the Liquid Ingredients
In another bowl, whisk together the milk, heavy cream, eggs, granulated sugar, vanilla extract, and salt until well combined.
Combine Bread and Mixture
Pour the liquid mixture over the torn bread, making sure all pieces are soaked. Allow it to sit for about 15 minutes to absorb the flavors.
Add White Chocolate
Gently fold in the white chocolate chips into the soaked bread mixture.
Bake the Pudding
Transfer the mixture into a greased baking dish and bake in the preheated oven for 45-50 minutes or until the top is golden brown and a toothpick inserted comes out clean.
Banana Rum Sauce Preparation
Melt Butter
In a saucepan over medium heat, melt the unsalted butter.
Cook Bananas
Slice the ripe bananas and add them to the melted butter. Sauté for about 2-3 minutes until slightly softened.
Add Sugar and Rum
Stir in the brown sugar, dark rum, and cinnamon. Cook for an additional 3-4 minutes, allowing the sauce to thicken and the alcohol to cook off.
Serve
Remove from heat and serve the warm banana rum sauce over the freshly baked white chocolate bread pudding.
