    Soak the Noodles

    In a large bowl, soak the rice noodles in enough water to cover them for about 30 minutes until they are soft but not mushy.

    Prepare the Protein

    While the noodles are soaking, crack the eggs into a bowl and whisk them lightly. Set aside.

Cooking

    Cook the Shrimp

    In a large skillet or wok over medium heat, add a splash of oil. Once hot, add the shrimp and sauté for about 3-4 minutes until they turn pink and opaque. Remove from the pan and set aside.

    Stir-fry the Vegetables

    In the same skillet, add a bit more oil if necessary, then add the minced garlic, chopped green onions, sliced bell pepper, and julienned carrot. Stir-fry for about 2-3 minutes until the vegetables are tender yet crisp.

    Add the Noodles and Sauce

    Drain the soaked noodles and add them to the skillet with the stir-fried vegetables. In a bowl, mix the soy sauce, fish sauce, sugar, chili paste, and lime juice, then pour this mixture over the noodles. Toss everything together well.

    Add the Eggs and Shrimp

    Push the noodles and vegetables to one side of the skillet. Pour the whisked eggs into the empty side and scramble them until just set. Then mix everything together, adding the cooked shrimp back into the skillet. Stir for another minute.

Serving

    Remove from heat and garnish with chopped cilantro. Serve hot with lime wedges on the side.
