Method

Preparation

  1. 1

    Mix Dry Ingredients

In a large mixing bowl, whisk together the all-purpose flour, sugar, baking powder, baking soda, and salt until well combined.

  2. 2

    Mix Wet Ingredients

In another bowl, combine the buttermilk, egg, melted butter, and vanilla extract. Whisk until the mixture is smooth.

Cooking

  1. 3

    Combine Mixtures

Pour the wet ingredients into the bowl of dry ingredients. Gently fold the mixture together using a spatula until just combined. Be careful not to overmix; some lumps are okay.

  2. 4

    Preheat the Griddle

Heat a non-stick griddle or skillet over medium heat. Lightly grease it with a bit of butter or oil.

  3. 5

    Cook Pancakes

Pour 1/4 cup of batter onto the preheated griddle for each pancake. Cook until bubbles form on the surface, about 2-3 minutes. Flip the pancakes and cook for another 1-2 minutes until golden brown.

  4. 6

    Serve

Serve the pancakes warm, topped with local berries and drizzled with maple syrup to taste.
