Mousse Preparation

Melt the Chocolate
Chop the dark chocolate into small pieces and place it in a heatproof bowl. Set the bowl over a pot of simmering water (double boiler method) and stir until melted and smooth. Remove from heat and let it cool slightly.

Whip the Cream
In a separate bowl, pour the heavy cream and whip it with an electric mixer on medium speed until soft peaks form. Be careful not to overwhip. Set aside.

Combine Egg Yolks and Sugar
In another bowl, separate the egg yolks from the egg whites. Add the granulated sugar to the egg yolks and whisk until pale and creamy.

Mix in Chocolate
Add the melted chocolate to the egg yolk mixture and stir until well combined. Stir in the vanilla extract.

Fold Ingredients Together
Gently fold one-third of the whipped cream into the chocolate mixture to lighten it. Then, carefully fold in the remaining whipped cream until no streaks remain.

Incorporate Egg Whites
Gently fold the whipped egg whites into the chocolate mixture until fully combined, taking care not to deflate the mixture.

Chill the Mousse
Spoon the chocolate mousse into individual serving dishes or glasses. Cover with plastic wrap and refrigerate for at least 2 hours, or until set.

Serve
Before serving, whip additional heavy cream and dollop it on top of each mousse. Optionally, garnish with chocolate shavings or berries.
