Preparation of Fish

Choose Your Fish
Select 3 pieces of your preferred fish fillets: Tilapia, Catfish, or Whiting.

Rinse the Fish
Rinse the fish fillets under cold water and pat dry with paper towels.

Mix Dry Ingredients
In a large mixing bowl, combine 1 cup all-purpose flour, 1 cup cornmeal, 1 tsp baking powder, 1 tsp salt, 1 tsp black pepper, 1 tsp paprika, and 1 tsp garlic powder.

Make the Batter
Gradually add the wet ingredients to the dry ingredients, stirring until a smooth batter forms.
Frying the Fish

Heat the Oil
In a large, deep skillet, heat 4 cups of vegetable oil over medium-high heat until it reaches 350°F (175°C).

Coat the Fish
Dip each fish fillet into the batter, ensuring it is fully coated.

Fry the Fish
Carefully place the coated fish fillets into the hot oil and fry for about 4-5 minutes on each side, or until golden brown and crispy.

Drain the Fish
Using a slotted spatula, remove the fried fish from the oil and place them on paper towels to drain excess oil.
Serving

Arrange the fried fish on a plate and serve with lemon wedges and a side of tartar sauce.
