Crust

1. Prepare the crust

Preheat your oven to 350°F (175°C). In a medium bowl, combine the graham cracker crumbs and granulated sugar. Pour in the melted butter and mix until the crumbs are evenly coated.

2. Form the crust

Press the crumb mixture firmly into the bottom and slightly up the sides of a 9-inch springform pan. Bake the crust for 8-10 minutes until lightly golden. Remove from the oven and let it cool while preparing the filling.

In a large mixing bowl, beat the softened cream cheese until smooth and creamy. Gradually add the granulated sugar and continue to mix until well combined.

4. Add remaining ingredients

Add the sour cream, vanilla extract, and eggs one at a time, mixing well after each addition. Ensure the mixture is smooth and free of lumps.

5. Bake the cheesecake

Pour the cheesecake filling into the cooled crust and smooth the top with a spatula. Bake in the preheated oven for 55-60 minutes, or until the edges are set and the center has a slight jiggle.

6. Cool the cheesecake

Turn off the oven and crack the oven door. Let the cheesecake cool in the oven for about 1 hour. Then remove it from the oven and cool at room temperature for another hour. Refrigerate for at least 4 hours or overnight before serving.

If using, slice fresh strawberries and set aside. You can also prepare a simple strawberry sauce by blending strawberries with a little sugar until smooth.

8. Serve the cheesecake
