Calamari

Dipping Sauce

Method

Preparing the Calamari

  1. 1

    Clean and Cut

If not already done, clean the calamari by removing the insides and skin. Rinse thoroughly under cold water. Cut the calamari into rings about 1/2 inch thick.

  2. 2

    Prepare Breading Station

In a medium bowl, mix together the all-purpose flour, cornstarch, salt, black pepper, paprika, and garlic powder. In a separate bowl, whisk together the beaten egg and milk.

Breading the Calamari

  1. 3

    Coat the Calamari

Dip each calamari ring into the egg and milk mixture, allowing excess to drip off. Then coat it in the flour mixture, pressing lightly to ensure an even coating.

Frying the Calamari

  1. 4

    Heat the Oil

In a large pot or deep skillet, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C). You can test if the oil is ready by dropping a small amount of the flour mixture into the oil; it should sizzle.

  2. 5

    Fry the Calamari

Carefully add a few calamari rings at a time to the hot oil, avoiding overcrowding. Fry for about 2-3 minutes or until golden brown. Use a slotted spoon to remove the calamari and drain on paper towels.

Preparing the Dipping Sauce

  1. 6

    Mix the Sauce

In a small bowl, combine the mayonnaise, ketchup, lemon juice, and hot sauce. Stir well until all ingredients are blended.

Serving

  1. 7

    Plate and Serve

Arrange the fried calamari in a basket or plate and serve hot with the dipping sauce on the side.
