Method
Calamari Preparation
- 1
Prepare the Calamari
Rinse the cleaned calamari under cold water and pat dry with paper towels. Cut them into rings or leave them whole, depending on your preference.
- 2
Make the Batter
In a large bowl, combine the all-purpose flour, cornstarch, salt, black pepper, garlic powder, and paprika. Mix well until all dry ingredients are thoroughly combined.
- 3
Soak Calamari
Pour the buttermilk into another bowl. Dip each piece of calamari in buttermilk, ensuring it's well coated, then dredge in the flour mixture. Shake off any excess flour before placing on a plate.
Frying
- 4
Heat the Oil
In a large, heavy-bottomed pot or deep fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).
- 5
Fry the Calamari
Carefully add a few pieces of the coated calamari to the hot oil, making sure not to overcrowd the pot. Fry for about 2-3 minutes or until golden brown and crispy. Use a slotted spoon to remove the calamari and drain on paper towels.
- 6
Garnish and Serve
Once all calamari is fried, transfer to a serving platter. Garnish with chopped parsley and serve with lemon wedges on the side.
