    Prepare the Vegetables

    Peel and dice the potatoes, carrots, and celery. Finely chop the onion and mince the garlic.

    Prepare the Clams

    If using fresh clams, clean them under cold water. If using canned clams, drain and set aside.

Cooking

    Sauté the Vegetables

    In a large pot over medium heat, add a little oil or butter. Once hot, add the onions, carrots, celery, and garlic. Sauté until the onions are translucent, about 5 minutes.

    Add Potatoes and Broth

    Stir in the diced potatoes and pour in the chicken or vegetable broth. Add the bay leaf and thyme. Bring to a boil, then reduce heat and let simmer for 15-20 minutes, or until the potatoes are tender.

    Add Clams and Dairy

    Add the clams, heavy cream, and milk to the pot. Stir well and let it heat through for about 5 minutes. Do not let it boil.

    Season the Chowder

    Season with salt and black pepper to taste. Remove the bay leaf before serving.

    Ladle the chowder into bowls and garnish with chopped parsley. Serve hot with crusty bread, if desired.
