Method
Ice Cream Base Preparation

Combine Ingredients
In a large mixing bowl, whisk together the heavy cream, whole milk, granulated sugar, vanilla extract, and salt until the sugar is fully dissolved.

Heat Mixture
In a saucepan over medium heat, combine the mixture. Heat until it is warm, but do not boil. Remove from heat.

Cook the Base
Cook over low heat, stirring constantly, until the mixture thickens enough to coat the back of a spoon (about 10-15 minutes).

Chill
Remove from heat and let it cool to room temperature, then refrigerate for at least 4 hours or overnight.
Chocolate Layer Preparation

Add Cocoa Powder
Once the base is chilled, divide it into two equal portions. To one portion, whisk in the unsweetened cocoa powder until fully combined.

Melt Chocolate Chips
In a microwave or double boiler, melt the chocolate chips. Stir until smooth and incorporate into the chocolate ice cream base.
Cherry Layer Preparation

Prepare Cherries
If using fresh cherries, pit and chop them into small pieces. If using frozen, thaw and drain excess liquid.

Combine with Base
To the second portion of the ice cream base, add the chopped cherries and almond extract. Mix well.
Pistachio Layer Preparation

Prepare Pistachios
Chop the pistachios coarsely. If desired, reserve a few for garnish.

Combine with Base
Add the chopped pistachios and green food coloring to the remaining portion of the ice cream base and mix until the color is evenly distributed.
Freezing and Serving

Layer the Ice Cream
In a loaf pan or ice cream container, layer the chocolate ice cream at the bottom, followed by the cherry ice cream, and finally the pistachio ice cream on top.

Freeze
Cover and freeze the layered ice cream for at least 6 hours or until firm.

Serve
Scoop the spumoni into bowls and garnish with reserved pistachios if desired. Enjoy!
