Combine Meat
In a large mixing bowl, combine the ground pork and ground beef. Mix them together until well combined.

Add Spices
Sprinkle the salt, black pepper, garlic powder, onion powder, paprika, red pepper flakes, sage, and thyme over the meat mixture. Use your hands to mix the spices thoroughly into the meat until evenly distributed.

Incorporate Binders
Add the breadcrumbs and the egg to the meat mixture. Mix well until all the ingredients are combined and the mixture is slightly sticky.
Shaping and Cooking

Form Patties or Links
If making patties, take a portion of the mixture and form it into a round patty about ¾ inch thick. If using casings, stuff the mixture into the casings and twist to form links.

Heat Oil
In a large skillet, heat the olive oil over medium heat. Allow it to become hot but not smoking.

Cook Sausages
Add the formed patties or links to the skillet. Cook for about 4-5 minutes on each side or until they are golden brown and fully cooked through (internal temperature should reach 160°F/71°C).
